Stuffed Mushrooms

Cooking Time : 8 minutes micro cooking.

Ingredients

Large Onion finely chopped

Fresh mint, chopped

Cheese, grated

Butter

Pepper powder

Mix together

2 tbsp
vinegar

1 tsp
oil

pinch salt

pinch mustard powder.

Preparation & Cooking

  1. Wash and clean mushrooms; remove the stems; carefully make a depression in the cavity of each mushroom with the peeler; properly brush their inside and outside with marinade and keep them aside.
  2. Chop mushroom stems finely.
  3. Heat butter in a microwave-safe bowl for 1 minute on HIGH and add chopped onion and mushroom stems. Cook on micro HIGH for 2 minutes, uncovered.
  4. Beat eggs and pour into the onion mixture; add pepper powder too, and cook on micro Medium for 2 minutes, stirring once in between.
  5. Remove and add half the grated cheese and chopped mint leaves.Mix well. The stuffing should be nice and soft.
  6. Stuff mushroom caps carefully and sprinkle the tops with rest of the cheese.
  7. Place in a heatproof plate and just heat through on Micro HIGH for 3 minutes.

Serving

Serve them hot as starters or cold with salads.

Variation

  1. Avoid egg and instead use ¼ cup fresh breadcrumbs.
  2. Use chopped parsley/coriander instead of mint.
  3. Add chopped Green Chillies.
