Cooking Time : 10 minutes micro cooking and 1 hour for cooling and setting.
Preparation & Cooking
- Mix almonds and 2 cups water in a microwave-safe bowl; boil on HIGH for 6 minutes; stand for 5 minutes and blanch; take them out and remove skin.
- Combine blanched almonds and 2 cups of water in a grinder and grind to a very smooth paste; filter through a muslin/cheese cloth into a microwave-safe bowl; add sugar; cook on HIGH for 4 minutes and mix condensed milk.
- Mix gelatine with 3 tbsp water and place in hot water to fully dissolve. Add it to the almond mixture. Add almond extract or essence and stir well.
- Pour the almond mixture into a shallow dish to cool. Place in a refrigerator to set. Serving: When almond jelly is set, cut it into ½-inch cubes and serve with any combination of fruits like chopped apples, pears, pineapple or litchis, etc.
Note: Almond Jelly is a Chinese dish and it is made with ground almonds and gelatine or agaragar and its serving with combination of fruits gives the fruit dish a new dimension.
