Brown Onion Paste
Cooking Time : 6 minutes for micro cooking.
Preparation & Cooking
- Mix onions and oil together and cook in a hot oven for 30 to 40 minutes or until it turns light brown in colour. Stir once.
- Cool and pass through a liquidiser with ½ cup water for a slightly coarse paste.
- Store in a clean, air-tight jar under refrigeration. This paste lasts for 8 to 10 days.
You can also chop onions and deep fry them; cool; turn into paste and store.
It makes tasty, veg and non-veg gravies in microwave without leaving behind a taste of raw onions. Brown onion paste is very handy while cooking, particularly, in a microwave where we do not have the concept of frying (Bhuno) till oil separates. On the contrary, the oil does separate but with cooking for a specified period and giving proper standing time to the dish. As a result, the flavour and the colour of the cooked dishes appeal to our appetite as well as our eyes.
