Consommé (A Clear Soup)

Cooking Time : 5 minutes for preparation and 25 minutes for micro cooking.


Well-flavoured stock
6½ cups
Egg white
Carrot, grated
1 large
Egg shells
Meat, minced
100 gm
Salt & Pepper
to taste

Preparation & Cooking

  1. Boil stock in a deep microwave-safe bowl for 12 minutes on micro HIGH.
  2. Add minced meat and grated carrot.
  3. Beat egg white stiff; crush eggshells; and put shells and egg in boiling stock.
  4. Cook on micro LOW for 15 minutes or till all the sediments are gathered by meat, egg and shell mixture. Strain the soup through a muslin cloth twice and discard the meat-egg mixture.


Serve this water-like clear but tinted soup in a glass cup or a bowl as a starter with any meal
