Cream of Celery Mushroom Soup

Cooking Time : 15 minutes micro cooking.

Ingredients

Mushrooms, finely chopped

1 cup
Stock veg/non-veg

4 cups
recipe White sauce
-

Fried phool makhanas
-
½ cup
Celery, finely chopped

1 stalk
Pepper powder
-
1 tsp
Cream
-
2 tbsp

Preparation & Cooking

  1. Place chopped mushrooms and celery in a microwave-safe bowl; add stock and cook on micro HIGH for 5 minutes, covered.
  2. Add white sauce, salt and pepper to the mushroom bowl; mix with a whisk and cook on HIGH for 10 minutes, covered.
  3. Check seasoning.
  4. Put ½ tsp cream in each individual soup bowl and pour hot soup on top. Stir well.
  5. Garnish with sliced pieces of mushroom and celery.

Serving:

Serve hot with garlic bread/crisp toast or buttered dinner rolls.

Variation:

Mixed chopped vegetables can also be added along with celery and mushroom.
