Pasta and Bean Soup
Cooking Time : 18 minutes micro cooking time.
Kidney beans, boiled
Tomato, skinned and chopped
Pepper, freshly ground
Small Pasta, boiled
Parmesan cheese, grated
Preparation & Cooking
- Heat oil in a microwave-safe large bowl for 1 minute on HIGH.
- Add shallots and garlic, stir well and cook on HIGH for 2 minutes, uncovered.
- Add parsley and kidney beans; mash beans with a wooden spoon; add tomato purée and stock; cover and cook for 15 minutes on HIGH. After 6 minutes, open the lid and add boiled pasta, salt and pepper. Cover again and cook for remaining time.
- Stand for 2 minutes.
- Open the lid and add grated cheese and basil.
Serve hot with any Italian accompaniments.
