Pasta and Bean Soup

Cooking Time : 18 minutes micro cooking time.

Ingredients

Kidney beans, boiled

Tomato, puréed

Tomato, skinned and chopped

Vegetarian stock

Parsley, chopped

Basil
Small Pasta, boiled

Shallots, cleaned

Garlic, chopped

Olive oil

2 tbsp
Parmesan cheese, grated

3 tbsp
Salt

to taste

Preparation & Cooking

  1. Heat oil in a microwave-safe large bowl for 1 minute on HIGH.
  2. Add shallots and garlic, stir well and cook on HIGH for 2 minutes, uncovered.
  3. Add parsley and kidney beans; mash beans with a wooden spoon; add tomato purée and stock; cover and cook for 15 minutes on HIGH. After 6 minutes, open the lid and add boiled pasta, salt and pepper. Cover again and cook for remaining time.
  4. Stand for 2 minutes.
  5. Open the lid and add grated cheese and basil.

Serving

Serve hot with any Italian accompaniments.
